Elon University has been named one of the nation’s top universities for community service, earning a Presidential Award in the first President’s Higher Education Community Service Honor Roll. The University, chosen out of 514 that applied for this honor, was recognized for their exemplary overall service learning and outreach program.
Good Morning Ladies and Gentleman! I have to say, it is early….you can tell this was not planned by college students- because we would never organize anything at this hour! Regardless, I am both honored and humbled by this opportunity to share a few minutes with you this morning, representing not only Elon University but all of the universities selected for the President's Higher Education Community Service Honor Roll.
This was one of my favorite dishes, perhaps because I was allowed to help Sitto stuff the light green Lebanese squash harvested from our garden. Sitto would even let me try to core it using one of the corers my mother had made from brass tubing.
1 can olive oil, 1 ½ t garlic powder, ½ bottle soy sauce, 1 t pepper, 6 drops Tabasco, 4 t parsley, ¾ olive oil can filled with water, ½ t ginger. Blend in blender and marinate steak or roast overnight.
Sear pork chops on each side. Place in casserole. Salt and pepper to taste. Brown pineapple slices lightly and put on chops. Add pineapple juice. Cover and bake at 350 degrees until done, about 35 minutes. Baste often. Thicken juice with flour or cornstarch solution.
Cut pork into 1 ½ inch cubes and mix well with wine, 2 tablespoons soy sauce and 2 tablespoons cornstarch. Fry pork in deep oil until crisp and golden brown. Turn out on plate.
Blend all ingredients except the oil together in a bowl. Beat in the olive oil by droplets to make mayonnaise-like cream. Pain the lamb with the mixture and set it on the rack of the roasting pan.
The second day of the Saudi Aramco Annuitants Reunion was packed with fun. Golfers were out of bed early meeting in the hotel lobby at 7:00 a.m.. They were bussed to the Ledgestone Country Club for a "shotgun start" at 8:30 a.m. The tournament was scheduled to last until 2:00 p.m. For you golf enthusiasts, here are some entertaining facts about the Ledgestone Golf Course:

It was hard to believe how fast the time was flying when the third day of the reunion arrived. Among the day's activities were the Tennis Tournament, a continuation of the Social and Duplicate Bridge Tournaments and the Sideline Exhibits, or just a day of relaxation and beautification in preparation for the evening semi-formal banquet dinner.
With talk of hurricanes headed towards the south-east coast, it was not surprising that the weather was spotty at best. But with some stroke of luck, Monday's weather made way for both the golf and tennis tournaments.

Embraced by the stone wall, greeting and guarding, the oleanders, "rose-bays," with blossoms in bunches, clumps of small cups, pink or white, deep green, sand dusted laurel leaves, pointed, narrow, isolate each from each, the beautiful poisonous leaves and blossoms delighting the eye, oleandre, oleandro, oleandrum, lorandrum, these became out of bushes trees beside the door, beside the gate, where you entered, where you went out.
One year ago Saudi Aramco hosted a group of educators from the Houston area for a nine-day tour of the Kingdom which included visits to Dhahran, Dammam, Al Khobar, Riyadh and Jeddah. Participants returned to Houston not only more enriched by their experience but eager to share their deeper understanding of Saudi Arabia with fellow educators and faculty, students, friends and family.
