The Abqaiq Cookbook - 1973

1 tsp. yeast
½ cup warm water
6 cups flour
1 tsp. salt
2 cups water
1 tsp. olive oil

Dissolve yeast in ½ cup of warm water and let set for five minutes.  Mix the salt and flour; add the dissolved yeast.  Gradually add the 2 cups water while kneading.  Grease the dough with olive oil.  Divide the dough into 6 equal parts.  Roll out, using rolling pin.  Place the flat pieces on a sheet and cover with a sheet or blanket.  Leave it covered for four hours to set.  Place each piece on an aluminum pie plate and bake in a PREHEATED oven set at “Broil” for 10 minutes.

Yield: 6 loaves
