1 T yeast
½ cup warm water (little sugar)
2 cup milk scalded
8 T shortening
8 T sugar
2 t salt
4 eggs, beaten
7 cups flour (approx)
Add shortening, sugar and salt to scalded milk. Cool to lukewarm. Add eggs. Gradually stir in flour. Form soft dough. Beat. Cover with damp cloth. Let rise (82 degrees F) until double. This takes about 2 hrs. Turn out on floured board. Knead slightly. Let rest 10 min. (covered). Knead slightly again, form. From this dough you can make 4 wreaths, one very large braid, or 36 cinnamon rolls. After forming, let double in bulk again. Bake at 350 degrees F until golden brown. Roll to a piece 18x6. Brush with butter and sprinkle with cinnamon and sugar.
Warm a ½ stick butter, box of sugar (sifted), thin with milk. Frost while warm.
