Make 9 inch pie shell, prick generously with fork, bake and cool.
1/3 cup enriched flour
½ cup sugar
1/8 tsp. salt
2 cups scalded milk
3 slightly beaten egg yolks
2 tbsp. butter
1 tsp. vanilla
3 bananas
Combine flour, sugar and salt. Blend in scalded milk gradually. Cook over boiling water until mixture thickens, stirring constantly. Blend a little hot mixture into the slightly beaten egg yolks and return to double boiler. Cook about two minutes, stirring constantly. Add butter and vanilla. Cool. Slice bananas into pie shell before pouring in filling. Top with whipped cream.
