1 tsp. grated lime rind
¼ cup lime juice
1 ½ tsp. plain gelatin
1/3 cup cold water
4 egg yolks
1/3 cup sugar
4 egg whites
¼ tsp. salt
½ cup sugar
½ cup cream, whipped if desired
Green Food coloring
Add gelatin to water; set aside. Put egg yolks, 1/3 cup sugar, lime rind and juice into top of double boiler. Cook, stirring, over boiling water until thickened. Stir in gelatin until melted. Remove from heat. Beat egg whites and salt until they form peaks when the beater is raised. Slowly add ½ cup sugar while beating until stiff. Gently fold in the hot mixture. Add green coloring to make a pale green. Turn into a pre-baked 9 inch pie shell (crumb or pastry) and chill until set. Top with chipped cream before serving.
