1 fryer (3 lb.)
1 small green pepper, sliced
1 medium can crushed pineapple
1 cup soy sauce
1 medium onion, sliced
½ cup sugar
1 clove garlic
¼ tsp. ginger
2 tbsps. Brandy (optional)
Marinate chicken in soy sauce, sugar garlic, ginger and brandy for 2 to 3 hours. Remove from marinade. Bake at 350 degrees for 15 minutes. Add green pepper, onion and pineapple and bake another 45 minutes.
Yield: Approximately 4 to 6 servings
