The Abqaiq Cookbook - 1973

4 lbs. spareribs
½ cup dark brown sugar, packed
½ cup soy sauce
¼ cup catsup
1 tsp. salt
½ tsp. pepper
¼ tsp. ginger
2 green onions, chopped
1 can (13 ¼ oz.) pineapple chunks, drained
2 firm medium bananas, cut in 1 inch chunks

Cut spareribs into serving size pieces. In shallow open roasting pan mix well brown sugar, soy sauce, catsup, salt, pepper, ginger and green onions; add ribs and bake at 325 degrees for 1 hour and 50 minutes, occasionally brushing with sauce. Cover pan with foil during last 30 minutes of cooking time, if ribs turn too dark. Carefully spoon fat from pan; push ribs to one side of pan; add pineapple and banana chunks and brush ribs and fruit with sauce from pan. Bake 10 minutes longer or until ribs are tender and fruit is heated through.
